Mee Siam
Practically a must-have during any Malaysian trek, Mee Siam is a very popular noodle dish made from vermicelli noodles and a tangy, spicy sauce.

Other ingredients accent the taste of Mee Siam, such as preserved soya beans, lime juice, chili, dried prawns, and of course belachan - that secret Malay ingredient.
Served with toppings of shrimp, chicken, fried tofu and/or eggs, Mee Siam can be considered an "all-inclusive" flexible meal, giving it a universal appeal.
2 variations of the dish exist: dry and wet. In the wet version, the noodles are served with the sauce/gravy on top. The dry version has the noodles tossed with the gravy while being stir-fried, resulting in the infusion of tasty flavour in the noodles themselves.
