Store-bought ramen noodles are boiled as per usual, but are then drained and stir-fried along with all manner of ingredients: eggs, tofu, vegetables, beef, chicken or shrimp. Spicy pastes and curries are also added, and it's here that individual chefs or mamak stalls put their own individual spin on maggi goreng. Lime juice is often squeezed on to add lively zest to the heat of the spices.
A favourite at mamak stalls across Malaysia, maggi goreng is a top choice with the late-night party crowd, both for its ready availability and low cost.
