Whole chicken is boiled for lengthy periods of time, with pork bone stock being used to infuse flavours deep into the tender meat. The long preparation time is worth the wait, as the chicken retains its juices while absorbing the rich flavours of the stock, making for a succulent and complex dining experience.
While most Hainanese chicken recipes use a traditional ginger-based sauce for flavouring, a few Malaysian restaurants will also use honey and barbecue sauces to offer a different take on the dish. Bean sprouts are another uniquely Malaysian addition.
Most Malaysian Hainanese chicken rice recipes use chicken stock prepared separately from the chicken itself and exclusively for rice, along with ginger and pandan leaves, giving the rice a distinct yet complimentary flavour to accompany the meat.
In Malacca, the tradition of serving of rice balls alongside Hainanese chicken has given rise to Malacca Chicken Rice Balls, a dish with its own history and flavours.
